As Maui's Best Chef, I strive to create a unique and enjoyable dining experience for our diners.

 

Whether you are hosting a special event or just want to enjoy an evening of complete ease and delicious cuisine, I have the perfect menu for you. I specialize in Mediterranean specialties, native Hawaiian diet, celebration dinner planning, meal shopping, planning and preparation for the week, and using fresh and locally-sourced ingredients whenever possible.

 

My service is family-oriented and visitor-friendly—all meals are served with that special secret ingredient—aloha—so you and/or your family and guests can enjoy a world-class dining experience in the comfort of your own home.

Who is Bonz?

 "We want THIS kid," were the words spoken when Greg Heath first started working as a teenager in the new Italian restaurant in his native Boston.  "Chef Bonz," as he later became known, helped establish the restaurant from the ground up, then worked as a busboy, server, and culminating in his position as Head Chef.

After cheffing in Massachusetts, primarily Greek and Italian cuisine, Bonz headed west and cheffed his way through Beaver Creek/Vail before coming to Hawaii in 1993, for a visit to help set up a restaurant and Grand Opening for a friend on the Big Island.

Chef Bonz specializes in meal planning and preparation for not only Mediterranean, and classic / retro American, but has unique experience and knowledge of the traditional Hawaiian cuisine. Another colleague on Maui enticed him to apply for the Executive Sous Chef position at Ka‘anapali Beach Hotel to complement their Native Hawaiian cuisine with Mainland fare. The Executive Chef at KBH, at that time, was the only chef offering the “REAL” Native Hawaiian food.  Bonz gained knowledge about the Native Hawaiian diet,and its health benefits from the best—and was featured on Hawaii’s Kitchens.

Bonz has been a private chef for island visitors, family, friends and community events, winning awards at Taste of Lahaina, Maui Onion Festival (check out these recipes!), and more.

 

He and his wife Malihini are also the owners of Lahaina Spice Company— offering unique spice blends so you can bring “The Taste of the Islands,” to your own kitchen.
